Foods, necessary to provide energy and maintain a good state of health, are a source of functional molecules important for the prevention of diseases onset and progression of degenerative states that can result in real diseases. The research of this group is aimed to the study of foods with high nutritional value, such as blueberries, pomegranates, kiwifruits, olive and seed oils, goji berries, strawberries, saffron and many others, using traditional and advanced methodologies. In this way, it is possible to highlight the most interesting compounds responsible for foods healthy properties.
The research is carried out through the study of the food metabolic profile using untargeted methodologies such as Nuclear Resonance spectroscopy (NMR), which allows to obtain the overall profile of the metabolites (metabolomics) present in the samples and targeted methodologies (HPLC-DAD, GC, colorimetry, UV-vis spectrophotometry, etc.), used specifically for selected classes of compounds.

The proposed analytical protocol, together with suitable chemometric methods, allowed the characterization of different foodstuffs in terms of geographical origin, variety, genuineness and production technology and highlighted the presence of molecules of high biological interest that can be tested to evaluate the possible properties for disease prevention.
