PRIMARY OBJECTIVES
The aim of the Master is the training of a professional figure specialized in the fight against food crimes, i.e. an expert who supports the institutions in charge or companies in the sector in identifying and combating any type of fraud in the various areas of the supply chain (dairy, oil, wine, fish and meat), passing from production to transport and marketing of food. The organization of the Master is entrusted to a Didactic-Scientific Committee composed of professors from Sapienza University of Rome, belonging to different disciplinary areas and integrated by representatives of the Carabinieri Command for the Agri-food Protection (CUFA), the Order of Food Technologists, The Central Inspectorate of Quality Protection and Fraud Repression (ICQRF of the Ministry of Agriculture, Food Sovereignty and Forests - MASAF), and INAIL (National Institute for Insurance against Accidents at Work).
EXPECTED LEARNING OUTCOMES
At the end of the Master, the student will have addressed and acquired different taxonomic levels that include cognitive, operational, and meta-skills. In particular, he/she will have learned the theoretical and practical concepts on modern investigation techniques aimed at identifying commercial and health fraud, as well as the regulatory aspects on the subject. In addition, the student will be aware of analytical and chemometric techniques aimed at ascertaining the quality, authenticity, and geographical origin of a food product.

COURSE DETAILS
The internship consists of 190 hours of lessons (online, 38 ECTS) in the period February-June 2025, 250 hours of activities of internship (10 ECTS), additional activities (seminars, conferences etc., 2 ECTS) and the final test (10 ECTS) for a total of 60 ECTS. Lessons will be given on Friday from 9:00 to 13:00 and 14:00 to 18:00, and on Saturday from 9:00 to 13:00.
ADMISSION REQUIREMENTS
A degree in one of the following fields, or an equivalent qualification:
LM-6, LM-7, LM-8, LM-9, LM-11, LM-13, LM-22, LM-53, LM-54, LM-60, LM-61, LM-69, LM-70, LM-71, LM-73, LM-86, LM-GASTR, LMG-01, LS-22 and related fields, SECS/P13.
LEARNING RESOURCES
Virtual and multimedia classroom, reading room, chromatography teaching laboratory, spectroscopy laboratories (IR, NMR, UV-Vis, SAX, Terahertz), mass spectrometry laboratory, calculation laboratory.

- € 3200 payable in two equal installments;

ATTENDANCE REQUIREMENTS
To obtain the qualification, students must attend at least 75% of the classes.
