PRIMARY OBJECTIVES
The aim of the Master is the training of a professional figure specialized in the fight against food crimes, i.e. an expert who supports the institutions in charge or companies in the sector in identifying and combating any type of fraud in the various areas of the supply chain (dairy, oil, wine, fish and meat), passing from production to transport and marketing of food. The Master is organized to provide advanced knowledge on food chemistry and on the most innovative instrumental investigation techniques to ensure authenticity, traceability, as well as the detection of adulterations, alterations and counterfeits, also touching on regulatory, administrative, jurisprudential aspects and the economic implications inherent to them. The organization of the Master is entrusted to a Didactic-Scientific Committee composed of professors from Sapienza University of Rome, belonging to different disciplinary areas and integrated by representatives of the Carabinieri Command for the Agri-food Protection (CUFA), the Order of Food Technologists, The Central Inspectorate of Quality Protection and Fraud Repression (ICQRF of the Ministry of Agriculture, Food Sovereignty and Forests - MASAF), and INAIL (National Institute for Insurance against Accidents at Work).
EXPECTED LEARNING OUTCOMES
At the end of the Master, the student will have addressed and acquired different taxonomic levels that include cognitive, operational, and meta-skills. In particular, he/she will have learned the theoretical and practical concepts on modern investigation techniques aimed at identifying commercial and health fraud, as well as the regulatory aspects on the subject. In addition, the student will be aware of analytical and chemometric techniques aimed at ascertaining the quality, authenticity, and geographical origin of a food product.
